  • 150 g Hokkaido pumpkin

  • 1 ginger

  • 2 tsp cinnamon

  • 1 tsp clove powder

  • 1/2 tsp allspice, ground

  • 1/2 tsp cardamom, ground

  • 1 tsp nutmeg

  • 200 ml espresso

  • 4 tbsp maple syrup

  • 900 ml milk

  • 1 vanilla pod

Instructions

Step 1

Peel the pumpkin, cut in half, remove the seeds and cut the flesh into rough cubes. Remove about 150 g of pumpkin and cook in a small saucepan with enough water for 15 minutes over medium heat until soft. Drain the soft pumpkin cubes and puree finely with a hand blender. Freeze the remaining pumpkin cubes or use them further.

Step 2

Peel the ginger and grate finely with a zest. Mix the ginger, pumpkin puree, cinnamon, cloves, allspice, cardamom, nutmeg and 100 ml water.

Step 3

Espresso frisch aufbrühen. Vanilleschote der Länge nach einritzen und das Mark auskratzen. Vanilleschote und Vanillemark mit 700 ml Milch in einem Topf aufkochen. Die restlichen 200 ml Milch mit einem Milchaufschäumer aufschäumen.

Step 4

Espresso und Kürbispüree gut miteinander verrühren und durch ein feines Sieb geben. Espresso-Pumpkin Spice auf vier Tassen verteilen, jeweils 1 EL Ahornsirup einrühren. Heiße Vanillemilch aufgießen, mit Milchschaum und einer Prise Zimt oder Kurkuma bestäuben.

1. Grind coffee

A medium to coarse grind is best. Of course, you can also use already ground coffee.

2. Put the ground coffee into the filter

Use 75 grams of coffee to one litre of water. Of course, you can adjust the amount of coffee to your personal preference. Above all, you can vary the caffeine content.

3. Pour 1 litre of lukewarm water into the coffee pot.

The water quality is very important for the subsequent taste. Therefore, you should use a water filter* depending on the water hardness.

4. Put the Cold Brew in the fridge for at least 12 hours.

The finer the coffee is ground, the less time it takes. However, you can find many different times on the internet. 12 hours is considered the minimum. Sometimes 18 - 24 hours is also mentioned. Starbucks, for example, lets its cold brew coffee steep for 20 hours. So you should experiment a little until you find your personal sweet spot.

5. Remove the filter and serve the cold brew with ice.

As the cold brew coffee is quite strong, dilute it with water, milk or milk alternatives such as almond milk or soy milk as desired.
